Protein Pancakes

Ingredients
1/3 cup cottage cheese1/2 cup oats6 tbsp egg whites1/2 scoop whey protein powder (I use GNC 100% Whey Vanilla)1 tsp vanilla extract (or to taste)1/2 tsp baking sodaCinnamon (to taste)
Directions
1. Combine all ingredients and blend in a food processor. Depending on how smooth you want the batter, blend for up to 1 minute.

2. Heat up a skillet or griddle. Pour out pancake batter to make circles of approx. 4 inches in diameter. Cook until bubbles begin appearing (approx 2 minutes). Flip and cook on other side for another minute.

3. Remove from griddle and enjoy!

Serving Size: Makes 4-5 pancakes at approx 4 in diameter
