Turkey Lettuce Wrap

Ingredients
8 Medium Carrots, peeled & diced4 Stalks Celery, diced2 - 8oz Cans Water Chestnuts, drained & diced6 Green Onions, thinly sliced4 Tbls Ginger Root, grated or minced8 Cloves Garlic, minced2 Large Red Bell Peppers, diced2 LBS Ground Turkey Breast1 Cup Bottled Chinese Plum Sauce4 Tbls Soy sauce4 Tbls Rice Vinegar2 tsp Chili paste1/2 Cup Cashews, chopped1/2 Cup Cilantro, MincedLettuce (Big Romaine Leaves)
Directions
Sautee meat and then sautee veggies and garlic/ginger. Mix plum sauce, vinegar, chili paste and soy sauce (I also add some red pepper flakes to give it a bit of a kick) and then add to the veggie/meat mix. Reduce to low and simmer. Add cilantro and cashews at the end.
