Rosemary Strip Steaks with Brandy Sauce

2 16oz New York Strip Steaks, cut into quarters each2 tbps Rosemary, dried1 tbsp Pepper.5 tbsp Salt4 tbsp Light Olive Oil4 oz Brandy
- Remove fat from steaks
- Add spices to both sides of steaks
- In medium skillet, heat oil then sear steaks on both sides, about 2 minutes each.
- Cover Steaks with lid and cook until desired doneness.
- Removes steaks when done and cover with lid/foil to keep warm.
- Add to pan brandy and scrape debris from pan to incorporate to sauce. Reduce sauce until you can't smell the alcohol and it is of a syrup quality.
- Pour sauce over steak and enjoy!

Very good recipe! I over-cooked the steaks by accident, however the flavors were spot on. - 7/10/11

We also over cooked the steaks following the original recipe. I think they need to be cut way back on the cooking--we like our med/rare to med. Next time... :)
