Asian flank steak with peppers

1-1/2 lb flank steak4 large fresh pasillo peppers1/4 cup lite soy sauce1 Tbsp sugar
1. Slice flank steak against the grain thinly (this is easier if you freeze the steak about an hour before cutting). Clean and remove seeds from the peppers; slice thinly.
2. Heat large skillet at high heat. Add steak and peppers. Cook until mostly browned; drain excess juices/fats; add soy sauce and sugar. Cook until almost all soy sauce is evaporated. Serve over rice. Makes 6 servings.
