Multi-Grain Muffins

1/4 c Whole Wheat Flour1 1/4 c unbleached flour1/2 c quick oats2 TBLSP bran or toasted wheat germ2 TBLSP cornmeal1 TBLSP baking powder1 tsp cinnamon1/2 c Applesauce, unsweetened (or 1 med apple peeled/grated)1/2 c Raisins1 tsp salt1/4 c. chopped nuts (I use pecans)Baby Carrots, raw, 6 large Egg, fresh, 1 large1/2 c Canola Oil1/2 c Honey1 c Milk
Preheat oven to 400. Grease muffin pan. Combine all ingredients (up to and including carrots) in a large bowl. In another bowl, whisk egg, honey, oil & milk until smooth. Add wet ingredients to dry and stir until blended. Do not overbeat batter. Let rest for a minute. Fill muffin cups w/batter. Bake 17-18 minutes or until knife comes out clean.
