Lactation Cookies - Salted Caramel Chocolate Chip

Ingredients
1 cup Butter (softened/room temp)1 cup Sugar1 cup Brown Sugar (light brown - firmly packed)6 tbs Water3 tbs Flax Seed Meal2 Egg (large)1 tsp Vanilla Extract2 cups Flour1 tsp Baking Soda3 cups Oats1 cup Chocolate Chips5 tbs Brewer's Yeast*1/2 tbs Cinnamon2-3 tsp Ground Sea Salt (optional and to taste)1/2 cup Kraft Caramel Bits*Brewers Yeast can be cut down to as little as 2 tbs but I use more because I think the chocolate chips and caramel bits allow for the extra brewers yeast. =)
Directions
Preheat oven to 350°.
Mix the flax seed meal and water and let sit for 3-5 minutes.
Beat butter, sugar, and brown sugar well.
Add eggs and mix well.
Add flax seed mix and vanilla, beat well.
Sift together flour, brewers yeast, baking soda, cinnamon, and salt.
Add dry ingredients to butter mix.
Stir in oats and chips (and optional caramel bits)
Scoop onto baking sheet (rounded teaspoon size).
Bake for 12-14 minutes.
Let sit for a couple minutes then remove from tray to cool on wire racks.

Serving Size: Makes about 80 - 2 inch round cookies.
