Ingredients
Slow Cooker2 lbs Beef Chuck 3 Whole Green Bell Peppers1 Whole Yellow Bell Peppers2 Jalapeno Peppers2 Tomatillos4 Tbls of Fresh Cilantro1 Cup of Chopped Green Onions4 White or Red Onions2 Garlic Cloves2 Tbls Seasoned Salt2 Tbls Garlic Powder2 Tbls Pepper3 cups of chopped potatoes (Optional)Eat with tortillas (Optional)
Directions
Boil all peppers and tomatillos in a pot for 10 minutes until soft.
Cut beef chuck into 1 inch squares (Or smaller)
Cook over stove with garlic powder and pepper.
Blend garlic cloves and salt and everything in pot until well blended.
Cut all Onions and cilantro and add to slow cooker.
Add blended items to slow cooker.
(Optional) Add the potatoes
Add Beef to slow cooker and cook on high for 4-6 hours or until beef melts in your mouth.
My husband likes cheese on top of his. (Optional)
I allow myself to have 1 tortilla with this meal and a full glass of water afterwards! ;-)
