Blueberry Oatmeal Muffins

1 Cup old fashion rolled oats (not instant)1 Cup Vanilla Almond Breeze, unsweetened1/2 Cup unsweetened applesauce2 egg whites1 Cup whole wheat flour1/2 Cup brown sugar1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 1/2 tsp cinnamon2 tsp splenda2/3 Cup fresh blueberries
Soak the oats in the vanilla almond milk for about an hour
Heat oven to 400 degrees
Spray muffin pan with cooking spray
Combine the oat mixture with the applesauce and egg whites, mix until combined.
In separate bowl, mix dry ingredients
Add wet ingredients to dry and mix just until combined.
Add blueberries
Bake for 17-20 minutes
Remove from pan and let cool on wire rack
Serving Size: makes 12 servings (serving size: 1 muffin)
