Whole Wheat Pastry Flour, 1 cup Flour, white, 0.5 cup Baking Soda, 1 tsp Salt, 0.5 tsp Baking Powder, 0.25 tsp Nutmeg, ground, 0.25 tsp egg white, fresh, 4 large Honey, 0.75 cup Pumpkin, canned, without salt, 0.25 cup Olive Oil, 0.25 cup Vanilla Extract, 1 tsp Zucchini, 1 cup, grated Cranberries, dried, sweetened, 0.25 cup
Preheat oven to 350 degrees.
Use baking spray on a loaf pan.
Combine dry ingredients in a bowl.
Beat eggs in separate bowl until frothy.
Add honey, pumpkin, oil, and vanilla.
Add zucchini to egg mixture, then add in dry ingredients.
Stir in cranberries.
Bake at 350 degrees for 1 hour (check after 50 minutes) or until a wooden pick inserted in to the center comes out clean.
Serving Size: Makes 1 loaf (12 slices)
