Swiss Oatmeal

1 1/2 c water3/4 c steel-cut oats3/4 c fat-free milk1 6-oz carton plain low-fat yogurt3 T agave nectar or honey1/4 t pumpkin pie spice1/8 t salt1/2 c assorted dried fruit1/3 c coarsely chopped pecanssliced banana
In 2-quart saucepan combine water and oats. Bring to boiling; reduce heat. Simmer, uncovered, 8 minutes (oats will not be tender). Remove from heat; transfer to mixing bowl. Cool 5 minutes. Stir in milk, yogurt, 2 T honey, pumpkin pie spice, salt and dried fruit. Cover; chill 12 hours or up to 3 days.
To serve, heat oatmeal in saucepan over low heat 10 minutes. Stir in the remaining 1 T honey. Divide among serving bowls. Top with almonds and sliced banana.

I didn't have any FF yogurt, so I just changed it up a bit. I cooked the oats as directed and just used Skim Milk and 2 T Agave Nectar. This morning it was yummy, but I'm going to add some bananas and apples to it tonight and have it for breakfast tomorrow. I don't even think it needs the yogurt. - 4/30/08
