Bean Brownies

Ingredients
You can use one bag of dry beans (any kind will do) soaked over night or 2 cans of any kind of beans. I just like to use kidney beans.2oz. (half a bar) Ghirardelli 100% unsweetened cacao I use 2 eggs but feel free to use 4. The original recipe called for 4. I cut in in half to cut the calories.1 tsp baking powder1/2 tsp cinnamon1/2 vanilla extract or you can add a little bit more.Dash of salt of Amino AcidNuStevia or any sweetener of your choice to taste
Directions
Preheat oven to 350*.



Grease an 8x8 or similar size pan and set aside.



In a blender mash the beans until smooth. Place mashed beans in a mixing bowl. Melt chocolate in microwave for a few minutes. While the chocolate is melting, add the eggs, baking powder, salt or amino acids, cinnamon, vanilla extract and extra virgin olive oil. Mix well together. Add the chocolate and then add the NuStevia to taste. Go very easy with the stuff, it is very sweet. 1/8 tsp. NuStevia equals 1 tsp. of sugar. Add the mixed ingredients to the 8x8 pan and cook for about 30 minutes or until the brownies pull away from the sides of the pan.



The original version I found had only four ingredients in it. I tried it and it was very good. I would use that recipe again if I were in a pinch. It called for the beans, chocolate (not cacao and not healthy for you!), baking powder and 2 eggs. Since then, I’ve added some stuff to it, as you can tell. The recipe I actually use doesn’t call for the extra virgin olive oil (calories!!!) and I don’t grease my pans, I use glass cookware (grease not needed).
