Lemon Pudding Cake from Cook's Country

Ingredients
1/2 cup Granulated Sugar5 T Butter2 T Lemon Zest5 Large Eggs Seperated1/4 Cup Cake Flour2 tsp. Corn Starch
Directions
½ cup sugar
5 T butter
2 T lemon zest

Cream together
5 eggs separated
Add yolks to mixture
¼ cup flour
2 tsp corn starch (mix with flour)
Mix on medium low

1 ¼ cups whole milk room temp
½ cup lemon juice

Whip egg whites (5) beat at med high to soft peaks about 2 minutes – watch after 1 min
¾ cup sugar added slowly with mixer running

Incorporate 1/3 egg white mixture with yolk mixture
Carefully add rest of egg whites

Cook in 8 inch square in water bath half depth of pan
350 degrees for 1 hour
Let cool for 1 hour
Sprinkle with powdered sugar
