Mom's Meatloaf with Ketchup Brown Sugar Glaze

Ingredients
2-1/2 lbs meatloaf mix (ground sirloin/ground pork/ground veal)1/2 cup chopped onion2 TBS dried parsley3 eggs6 TBS ketchup1 cup dried bread crumbs (I make my own)1/2 cup fiber one cereal, ground1/4 cup skim milk1/2 tsp sage1 tsp salt1/4 tsp pepper
Directions
Mix all ingredients except meat in large bowl and mix well. Add ground meat and blend together lightly but thoroughly. Shape into loaf and place in 9x11 baking dish. Bake at 350 for 60 minutes. Remove from oven and transfer to another baking dish - this is to get it out of all the fat drippings. Mix together 1/4 cup ketchup, 1 tsp dry mustard and 1 TBS brown sugar and pour over top of meatloaf. Return to oven and bake for another 15 minutes. Remove from oven and let rest for 15 minutes if desired, then serve.
