Grilled Chicken & Peaches w/Chipotle Peach Dressing

Ingredients
9 chicken thighs1 Tbl extra virgin olive oil1/2 cup peach or apricot spreadable fruit – no sugar added1/2 cup peach nectar (Kerns)4 teaspoons balsamic or red wine vinegar2 teaspoons adobo sauce from canned chipotle chiles1/2 teaspoon chopped fresh cilantro1/2 Tbl fresh Italian parsley, plus garnish1 16oz bag frozen peaches, thawed
Directions
In medium bowl, stir preserves, nectar, vinegar, adobo sauce, cilantro & chopped parsley together. Coat ingredients well. Heat skillet and oil until hot. Put chicken in and let sizzle. Turn when browned. Cook for a few minutes then add sauce and heat thoroughly - about 2 minutes.
Place one thigh on a bed of rice and surround with peaches. Drizzle dressing from Garnish with fresh sprigs of herbs.
Serving Size: Makes 9 servings - 1 thigh & 3 peach slices & 2 Tablespoons of dressing. Serve over wild rice pilaf for a great meal.
