1 sm head cabbage, chopped (about 9 cups)1 c. shredded carrots1/2 c. Veganaise1 T. sesame oil1/2 c. seasoned rice vinegar1/4 red onion, chopped1 c. chopped scallions1/2 c. dry roasted peanuts, chopped1/4 c. chopped cilantro1 orange, chopped
First make the dressing: Combine veganaise, sesame oil, and rice vinegar in a jar and shake vigorously to mix.
Combine all other ingredients in a large, nonreactive bowl, pour dressing on top, and mix thoroughly.
