Mojito Watermelon

Ingredients
1 large watermelon, cut into 1" cubes1/2 cup Splenda1/2 cup warm waterpinch of salt1/2 cup lime juice4 tsp lime zest4 Tbsp fresh mint, finely chopped
Directions
In a small bowl, wish Splenda with warm water until dissolved. Microwave if necessary to fully dissolve. Stir in a pinch of salt, lime juice and zest. Stir in mint. Cover and refrigerate until cool, at least one hour. Can be made ahead and kept for up to 3 days.

Cube watermelon into 1" pieces and chill. Drizzle lime-mint syrup over watermelon chunks and toss. Enjoy cold.
