Chocolate Chip Pumpkin Cake

4 cups flour3 cups sugar2 tsp baking soda1-1/2 tsp salt1 tsp baking powder1 tsp cinnamon1 tsp nutmeg1 tsp allspice1/2 tsp ground cloves15 oz can pumpkin2/3 cup cold water1 cup oil (I use Smart Balance Omega)4 eggs8 - 10 oz chocolate chips
In a VERY large bowl stir together dry ingredients (flour - cloves).
In a large bowl mix pumpkin, water and oil. Add eggs, one a time, beating well after each addition. Add (carefully) to flour mixture, blending thoroughly. Stir in chips. Pour into three greased and floured (small) loaf pans (or two large loaf pans or one very large bundt pan)
Bake about one hour or until pick in center comes out clean. Larger pans may need extra baking time. 36 servings is based upon 3 small loaf pans. These freeze very well; also work extremely well in mini pans to be given as gifts! Sprinkle a little confectioner's sugar on top for a pretty look. I have been making this cake for 26 years - it is a hit every time!
