12 oz. chicken breast tenderloins 3 wedges of Laughing Cow Mozarella, sundried tomato and Basil cheese2 T fresh basil chiffonade1 T olive oil1 tsp salt
pound the chicken to get it 1/4 in thick. Mix together the cheese and basil and spread thinly on the chicken breast, leaving a little room on the sides and ends so the cheese doesn't spill out. Heat oil in a pan. Add chicken to the hot pan, seam side down so that it stays rolled in place. cook approx. Cover while cooking to make sure the chicken cooks all the way through quickly. Cook on one side for 4 minutes. Turn over and brown on the other side for an additional 4 minutes. Serve over Basmati Rice.
