Jumbo Poppy Seed Muffins

1 3/4 cups flour1/4 cup splenda1 tbsp. baking powder1/4 tsp. salt1/4 cup unsweetened applesauce2 tsp. canola oil3/4 cup milk1 (6 ounce) container fat free lemon, vanilla, or plain yogurt1/3 cup poppy seeds1 tbsp. lemon juice1 tsp. vanilla
In a large bowl, mix flour, splenda, baking powder, and salt. In a seperate bowl, whisk together applesauce, oil, yogurt, milk, lemon juice, and vanilla. Make a well in the center of the dry ingredients, and add the wet ingredients to the wel.. Once everything is almost combined, stir in the poppy seeds, and mix again until everything is just moistened. Fill each nonstick cooking spray-coated muffin tin 2/3 ful and bake for 20-25 minutes at 400`F, or until a toothpick in the center comes out clean. Allow to cool in the pan for 10-15 minutes.
