Chicken w/Yellow Peppers & Portobella Mushrooms

Ingredients
2-4 Tbsp. Olive Oil1/2 cup Seasoned Flour1 lb boneless, skinless chicken breasts, cut into pieces1 yellow bell pepper, sliced1 pkg. sliced portobella mushrooms1 shallot, minced (about 2 Tbsp.)1 cup chicken stock or brothFresh cilantroSalt & Pepper to taste
Directions
Shake the chicken in the flour in a zip-lock bag to lightly coat. Heat 2 Tbsp. olive oil in large skillet and brown the chicken on all sides. Remove from heat (chicken is NOT fully cooked), add more oil if needed and saute the shallots, peppers and mushrooms until limp. Add flour from the zip lock bag and cook for a minute or two, mixing with vegetables. Add chicken broth and stir. Add chicken, salt & pepper and cilantro to taste. Cover and simmer for 20 minutes. Serve over rice, noodles or potatoes. Makes 4 servings.
