Cranberry Dark-Chocolate Suck-My-Nuts Truffles

5 ounces dark chocolate1/4 cup skim or soy milk8 ounces non-fat cream cheese1/2 cup dried cranberries1/4 cup toasted walnuts, finely chopped3/4 cup finely chopped pecans1 tsp lemon zest 1 tsp cinnamon or allspice3 tbsp unsweetened cocoa powder
In a double boiler, combine dark chocolate and milk. Melt over low heat, stirring constantly. Remove from heat and allow mixture to cool slightly.
In a bowl, beat cream cheese until smooth. Add chocolate, cranberries, walnuts, lemon zest, and cinnamon or allspice. Mix well.
Pour cocoa powder onto a small plate. Using two spoons, form mix into balls and refrigerate until balls have hardened so they are easier to handle. Lightly roll each one in cocoa powder to coat. Place balls in paper muffin cups. Chill until ready to serve. Refrigerated truffles will keep for 2 weeks.
