Tomato Basil Couscous

Ingredients
2 cups dry whole wheat couscous2 cups water4 tbsp Earth Balance Natural Buttery Spread1 tsp Salt6 roma tomatos, choppedleaves of 6 sprigs of fresh Basil, chopped semi-fine6 garlic cloves, crushed or minced1/2 cup extra virgin olive oil
Directions
Combine water, buttery spread, and salt in a sauce pan and bring to a boil. Remove from heat and stir in couscous. Cover and let stand for 5 minutes. In salad bowl, mix couscous, tomatoes, basil, garlic, and olive oil.
