Melt in Your Mouth Sugar cookies

1 cup margarine1 cup canola oil1 cup confectioners sugar1 cup granulated sugar2 eggs1 TBS vanilla extract1 tsp baking soda1 tsp cream of tartar1/2 tsp salt5 cups flour4 cups diced mixed dried fruits
Cream margarine with sugars. Then add oil, eggs, vanilla, baking soda, cream of tartar and salt. Then I add the flour and mix thoroughly. Stir in any thing else you want to add at the end. Shape into balls, and I flatten with the palm of my hand. (Can use glass dipped in sugar, but we prefer them plain). These really do melt in your mouth.
Bake at 350 for 8 to 10 minutes on lightly sprayed cookie sheets. Watch carefully, they will burn!
