Ingredients
Meatball mix1 pound ground beef 90/101/2 pound hot mexican chorizo (3 links)1 egg1/2 cup bread crumbshalf bunch cilantro chopped3 tbsp finely minced onionsalt and pepperBroth1-2 tsp olive oilI can tomatoes1 large onion diced1 jalapeno diced4 cloves garlic mincedchopped cilantro stemsoregano3 packs chicken bouillion powdercumin 1-2 tsp1 large zucchini or squash diced
Directions
cook onions, pepper, cilantro stems, and garlic in oil for 2-3 minutes, add tomatoes, oregano, cumin, and bouillion. Add 5-6 cans of water. Mix meatball ingredients, roll into small meatballs. Bring broth to low boil and carefully drop meatballs in soup. Simmer 10 minutes. Add diced squash and simmer another 10 minutes. makes 3.5kg
