GastriKate's Cucumber Salad

2 cucumbers, sliced thinly1/4 c. fat free mayo1/8 of a yellow onion, minced3 Tbsp. cider vinegar
Combine everything in a sealable, plastic container and leave in the fridge all day or overnight, if possible. Can be eaten right away, it just tastes better this way. Fresh thyme, red pepper flakes, and coarsely ground black pepper are nice additions, as well.
