Caprese Sandwiches

Ingredients
Ciabatta Rolls (any)Tomatoes (vine ripened are best)Extra Virgin Olive OilGarlic PowderReduced Fat Mozarella Cheese Slices (or non-fat)
Directions
1. Gather ingredients and a cookie sheet. Preheat oven to 350 degrees.
2. Slice the ciabatta rolls in half and place them on the cookie sheet with the inside of the sandwich facing up.
3. Spread the EVO on the rolls. Sprinkle Garlic Powder over the rolls.
4. Slice the tomatoes into thin/medium thickness. Place 2 to 3 slices of tomatoes on each bottom half of the ciabatta rolls.
5. Place 1 slice of the cheese on top of the bottom half of each ciabatta rolls.
6. Measure out and spread 1 1/2 tsp of the pesto on top of the cheese/tomatoes.
7. Put in the oven for 8-10 minutes or until cheese is melted.
8. Once they are cooked, put the tops of the rolls on top of the half with the pesto, tomatoes and cheese. Let cool for a minute or two before serving.
9 Enjoy!!!

(we usually have them vegan style but they can also be served with chicken breast on them!)
