2 cups old fashioned oats2 cups Kashi puffs1/2 cup Splenda for baking1/2 cup brown sugar1 tsp, vanilla1 tsp. baking soda1 tsp. baking powder1 tsp. cinnamon1/2 cup chopped, pitted dates1/2 cup flaked coconut1/2 cup raisins1/2 cup chopped walnuts1/2 cup dried apricots
Preheat oven to 325. Grease cookies sheets
Grind oats to a flour-like consistency. In a medium bowl, mash beans. Combine oats, baking, powder, baking soda, and cinnamon. Blend into bean paste. Stir in dates, coconut, raisins, and walnuts. Drop dough by heaping spoonfuls on to baking sheets.
Bake for 10-15 mins. in oven until golden. Cool on baking sheets for 5 mins. and then put on wire racks to cool.
