Penne Spinach Alfredo

Ingredients
8oz whole wheat penne pasta1 medium onion, chopped2 large cloves garlic, crushed1 Tbsp olive oil2 Tbsp smart balance butter2 Tbsp all-purpose flour2 1/2 cups fat-free half and half1 cup Parmesan cheese, grated2 tsp Italian seasoningsalt and pepper to taste1 14.5oz can diced italian tomatoes1 10 oz package chopped frozen spinach
Directions
In a large pot of boiling water, cook pasta until al dente. In a small saucepan, saute onion and garlic in olive oil until soft. In a large saucepan, melt butter; add flour and stir. Slowly add half and half and half and simmer, stirring constantly, until thickened. Add cheese and seasonings; stir until cheese melts. Add tomatoes, spinach and onion mixture, heat through. Pour over warm pasta, toss and serve.
