Cottage Cheese Apple Pancakes

Ingredients
3/4 cup grated apples1/2 cup FF Cottage Cheese1/4 cup egg whites1/4 tsp cinnamon1/8 tsp nutmeg (optional)1/4 tsp salt1/4 cup unbleached white flour1 tsp baking powder, sifted1 tsp canola oil or use oil spray on your pan1 Tablespoon maple syrup
Directions
Peel, core, and grate the apples into a mixing bowl. Thoroughly mix in the cottage cheese, eggs, cinnamon, nutmeg, maple syrup, and salt. Sprinkle in the flour and sifted baking powder, and stir well. Butter or oil a heavy griddle or nonstick skillet and place it on medium heat. For each pancake, ladle 1/2 cup of the batter onto the kot skillet. When bubbles form on the tops and the bottoms are browned, flip the pancakes over and brown them on the other side. Serve immediately topped with maple syrup. (The additional maple syrup to serve these with is not included in the calorie count).
