Sour Cream Chicken Enchiladas

Ingredients
3 cans cream of chicken soup3 cups sour cream2 cups fire roasted green chiles chopped8 chicken thighs boiled and shredded3 cups Colby Jack cheese shredded16 corn tortillas
Directions
Cook chicken.

Mix sour cream, chicken soup, green chiles, and chicken.

Roll mixture in tortillas with cheese. Arrange in pan. Pour rest of sour cream mix over top and top with remaining cheese.

Bake at 350 for 45 minutes or until cheese is browned and bubbly.

I usually make into two 9 x 9 pans and freeze one for later.
