Italian Turkey Meatballs

1 pound ground turkey breast3 oz pancetta, finely diced1 small onion, finely diced2-3 garlic cloves, finely diced1/2 c freshly grated Asiago cheese1/4 c fresh flat leaf parsley1/4 c plain bread crumbs1/4 c chopped sun-dried tomatoes2 eggs, lightly beaten3/4 t kosher salt1/2 t ground black pepper
Preheat oven to 450 degrees F and line a baking sheet with parchment or foil. In a large skillet, cook the chopped pancetta with minced onion & garlic until meat is crispy and onion/garlic are tender. Set aside and cool. Combine remaining meatball ingredients and add the pancetta mixture. Shape meatballs with melon baller and place on prepared baking sheet. Bake for 20 minutes or until meatballs are golden brown.
Serving Size: Makes about 20 meatballs (using a melon-baller)
