Coconut Rice topped with Pineapple

Brown Rice, long grain, 1 cup Water, 1.5 cup coconut milk, 1 cup Pineapple, fresh, 1 cup, diced
This is really easy. Rinse your rice.
Bring 1.5 cups of water to a boil. Add coconut milk and let return to a boil. Add rice, cover, and reduce heat. Let simmer for 45 minutes.
When there's about 10 minutes left to spare, quickly (so as not to lose too much steam and heat) add the pineapple. When done cooking, stir and serve.
Get creative and look for other options to season the rice than pineapple. Consider apples and pie spices, sweet squashes, or cinnamon and raisins.
