Baked Potato Skins

Ingredients
4 potatoes, baked 1 Cup cheddar cheese, grated 8 Tbsp. light sour cream 1/2 Cup chopped green onions8 Tbsp. Bacon Bits2 Jalapeno Peppers, minced4 Tsp. Garlic
Directions
Cut each potato into quarters lengthwise. Scoop out pulp. Spray potato skins with cooking spray and place on baking pan. Bake at 425 degrees for 10 minutes. Turn and bake for 5-8 additional minutes (until crisp and light brown). Remove from oven, place cheese, bacon bits, peppers and onions on each quarter. Return to oven and bake until cheese melts. Serve with 1 Tbsp of sour cream per quarter.
