Gluten Free Butter-Basted White Bread

Ingredients
6 c rice flour (gf flour mix has better taste & texture)5 tsp xanthan gum1 1/3 c powdered milk3 tsp salt3 tsp egg replacer (optional; I don't use it)6 Tbsp sugar3 1/3 c lukewarm water3 Tbsp yeast8 Tbsp melted butter2 tsp vinegar6 eggs
Directions
Mix all ingredients in stand mixer at high speed (consistency will not be right if a mixer is not used; hand mixers can be used if you do not have a stand mixer---just do all the wet ingredients + xanthan gum first, then add flour and mix by hand).

Spray top of dough with nonstick cooking spray and cover with plastic wrap; let raise until doubled in size (takes about 1 hour). Mix again. Divide into 24 rolls or 2 large loaf pans (greased) and let raise again.

Bake at 350, abt 20 - 30 min for rolls or 40 - 45 min for loaves. Cover well with foil after approx 10 - 15 min (they will singe on top otherwise).
