carrot coconut soup without oil

Ingredients
1.5 lbs raw fresh carrots, sliced1 tbsp curry powder 1tbsp ginger root1 clove garlic.5 C light coconut milk6-8 C water
Directions
In a large soup pot, cook ginger & garlic on medium heat until soft and fragrant.

Add carrots, curry powder, water and bullion to ginger and garlic.

Turn heat to High and allow to boil.

Cook until carrots are tender.

Puree, add coconut milk and serve.
