2 Tbsp lemon juice2 Tbsp olive oil1/4 tsp salt1/4 tsp pepper3 5oz cans tuna, drained1/2 small red onion, thinly sliced1/2 cup grape tomatoes, halved1/4 cup kalamata olives, pitted and halved1/4 cup flat leaf parsley, roughly chopped
1. In a large bowl, whisk togeth the lemon juice, olive oil, salt & pepper.
2. Add the tuna, onion, tomatoes, olives and parsley, gently tossing to comine.
