Black Bean and Sweet Potato Burrito

Ingredients
1 can candied sweet potatoes, drained and rinsed1 can black beans, drained and rinsed1/2 tsp ground cumin1/4 tsp onion powder1/4 tsp garlic powder4 fat free soft taco tortillas (cut in half)1 cup shredded mozzarella cheese
Directions
Mash sweet potatoes and half of the black beans. Stir in the remaining black beans and spices. Divide mixture into eighths to evenly top tortillas. Spread bean mixture onto halved tortillas and sprinkle with 1 Tablespoon of cheese. Roll up and warm in the microwave for 30 seconds (or until warm).

Makes 8 burritos.
