Citrus Mint Tuna Bean Salad

1 x 540mL can of black beans, rinsed and drained1 x 540mL can of mixed beans, rinsed and drained1 x 450mL can of cut green beans, rinsed and drained2 x 180g can of tuna, drained1 medium red pepper, slicedhalf an english cucumber, sliced2 cloves of garlic, crushed and slicedhandful of fresh mint, sliced chiffonade (little ribbons)Dressing:Juice of one whole lemon1 tbsp lime juice1 tbsp olive oil1 tbsp rice wine vinegar1 tsp ground cumin20 good grinds of pepperabout a tsp of salt (or to taste)
Toss all ingredients listed together. For best results, stick in refridgerator for a few hours for flavours to blend together.
Serve and enjoy!
