Sunny Potato Salad

Ingredients
2 med. baked potatoes, cubed into 1/2 dice3/4 c thinly sliced celery1/2 c grated carrot1/2 c diced onion2 large hard-boiled eggs, chopped1/2 c mayonnaise1 T. Penzey's Green Goddess dressing mix2-3 T. prepared grainy mustard
Directions
Combine all ingredients and mix well. Serve chilled.
