Eggs Florentine with Cottage Cheese

Ingredients
1 tbsp EVOO1/4 large onion1/4 Spike Original4 eggs1/4 Spike Original4 oz cottage cheese
Directions
Saute the onions in EVOO. Add frozen spinach and 1/4 teaspoon of Spike. Stir for about a minute and cover until the spinach has thawed. Whisk 4 eggs in a small bowl and add 1/4 teaspoon of Spike. Add eggs to the spinach mixture and scramble. Add cottage cheese and mix. Cover until the cottage cheese has melted. Makes 4 servings.

You may use plain salt, or other seasoning to taste.
