Ingredients
Chicken Breast, no skin, 1.5 breast, cooked and shredded*Peppers, sweet, red, fresh, 1 cup, chopped Yellow Peppers (bell peppers), 1 cup choppedsweet raw onion, 1 cup choppedKroger Fat Free Sour Cream, 1/2 C ( I didn't have enough ff sour cream, otherwise it would have all been fat free)Western Family low fat sour cream, 1/2 Cswanson low sodium 100% fat free chicken broth, 2 cansSavory Rice, 16 servings*Hillshire Farm Premium Deli Thin Sliced Hickory Smoked Ham, 5 servingsSwiss Cheese, 1 cup, shredded (recommend 2 if you like cheesy stuff)
Directions
This is the first time I've made this. I would make it differently next time. I would recommend layering and mixing the broth with the sour cream before adding it, as well as mixing it with the ingredients before putting it in the dutch oven.
In a large sauce pan, saute the peppers and onions. I would also add mushrooms if you like them. combine with the meat and rice, add sauce and put half in dutch oven (lined with foil for easier clean up) and a layer of cheese and then the rest and another layer of cheese.
cover and use 14 coals on the bottom and 16 on top. should take about 45 minutes.
