Lentil & Potato Lemon Soup

Ingredients
1 cup lentils, picked through and rinsed1 potato, cubed1 box (4 cups) vegetable stock, unsalted2 cups water1 small onion2 Tbsp. garlic powder (or a couple cloves crushed garlic)1 lemon, juiced1 Tbsp thyme1 tsp Beau Monde2 Bay Leaves1 cup frozen peas
Directions
Put everything but the peas in a medium sized pot. Bring to a simmer, cover and let simmer for 30 minutes. Remove pot from heat, add frozen peas. At this time you can let cool to store for later, or remove the bay leaves and serve.
