Hearty Fall Bean and Sausage Soup

Ingredients
1 T. olive oil1 large onion, diced2 carrots, diced2 stalks celery, diced1 russet potato, scrubbed with skin on1 package lean turkey sausagelarge (26.5 oz) can black beans28 oz, can diced tomatoes14 oz. can fire-roasted tomatoes3 cups fat-free chicken stockcumincurry powderblack pepper
Directions
Saute all veggies and sausage in oil with cumin and curry powder, black pepper to taste. Mix in beans, tomatoes, and broth. Bring almost to a boil, lower and simmer at least 30-45 minutes, or as long as you like. Makes a LOT! Yum.
