1 cup whole wheat flour2 tsp baking powder1 tsp cinnamon1/2 tsp allspice1/2 tsp salt2 1/2 cups Vector cereal1 cup soy milk, warmed1 tsp fresh-grated ginger2 tbsp raw sugar1/4 tsp stevia extract1 banana, mashed1 tsp banana extract1 tsp coconut extract1 tsp vanilla2 tbsp oil1 tbsp applesauce2/3 cup toasted sesame seeds
Preheat oven to 400°F, line a muffin tin or lightly grease.
In a medium bowl, mix flour, baking powder, cinnamon, allspice and salt
In a large bowl, combine cereal, coconut milk, ginger, sugar and stevia. Let stand 5 minutes.
Add mashed bananas, extracts, oil and applesauce and mix well.
Add flour mixture and sesame seeds and stir just until moistened.
Bake 20 minutes or until muffins test done.
Serving Size: Makes 12 muffins
