Easy Chicken Marsala

1 pound of boneless, skinless chicken breast (I use frozen)Garlic PowderSalt & Pepper (to taste)3 Tblsp olive oil3 cloves garlic, finely chopped2 cups fresh sliced mushrooms1 Tblsp parsley flakes1 cup marsala wine
Preheat oven to 400 degrees Farenheit. Place frozen chicken breasts in baking dish and sprinkle with garlic powder, salt and pepper. Place in oven for 20 minutes. Turn breasts and sprinkle with more garlic powder, salt and pepper. Return to oven for another 15 minutes.
After turning breasts, start olive oil in heavy large skillet over medium high heat. Add chopped garlic cloves to olive oil and heat for a minute or two, then add in the sliced mushrooms and parsley. Cook mushrooms and garlic until mushrooms start to soften. Add wine and let simmer until chicken is ready to come out of oven. Add chicken to skillet and cook for another 5-10 minutes, or until chicken is cooked thouroughly. Serve over pasta if desired.

MAGICHEIDE
I miss chicken marsala as it is my favorite "restaurant food." This low cal recipe satisfied my craving. The only thing I felt was missing was about 1/4 chopped onion so I added it in when sauteing the garlic and mushrooms (add 4 calories). Only used 1/2 cup wine. Tasted great! Chicken falls apart - 7/16/13
