Gluten Free Microwave Peanut Butter Protein Cup Muffin

2 Tbsp Bob's Red Mill Gluten Free All Purpose Flour2 Tbsp Body Fortress Vanilla Creme Protein Powder2 Tbsp Jif Reduced Fat Peanut Butter2 Tbsp Unsweetened Apple Sauce
I used a small ramekin but you can use a small cup (and may need to adjust cooking times).
The tablespoons measures were slightly rounded...not flat or heaping.
Put flour and protein powder into cup. Mix with fork. Add peanut butter and applesauce and mix well (tricky...mix well without over-mixing)...concentrate on getting the dry stuff out of the corners...
I used a 900 watt micro-wave and cooked for 45 sec.s on high. This will leave the top moist and almost iced appearing.
Is very hot...would suggest to let cool for a couple of minutes and eat straight from the rameking.
