Ham Egg Muffin Cup

9 slices Oscar Mayer Ham, 9 slices3 Large Eggs1/2 cup Cheddar Cheese1/4 cup of Vidalia OnionLiberal salt/pepper
Preheat oven to 375F.
In a bowl, scramble eggs and add the cheese and salt/pepper.
Spray cooking spray onto the muffin holes you intend to use on a muffin pan.
Layer ham around the bottom and rim of the muffin hole.
Pour equal amount of mixture into muffin hole.
Fold remaining edges of ham over the mixture.
Fill unused muffin holes with water to avoid burning the pan.
Place in oven for 20mins or until mixture is to liking (check with a toothpick).
Remove and sprinkle with more cheese(optional).
Let cool for 5 mins.
Pop them out and go!
