Rice noodles with cilantro pesto

Ingredients
6 c. prepared rice noodles (soaked in water, then briefly boiled)1 c. packed cilantro leaves1 jalapeno pepper1-2 garlic cloves, minced1/2 t salt1/2 t pepper1/4 c toasted, sliced almonds1/4 c sour cream2 T. lime juice3 c. peeled, seeded cucumber1/4 c. chopped dry-roasted peanuts
Directions
Prepare rice noodles. Load the cilantro leaves through almonds into a food processor until finely ground. Add sour cream and lime juice and continue processing till smooth. Combine the noodles, the pesto and the cucumber and toss. Serve cold topped with chopped peanuts.
