150g Cherry Tomatoes1 small red onion, finely chopped1 garlic clove, finely chopped1 tbsp olive oil150g Risotto Rice3-4 chicken thigh fillets, halved100g chorizo. thickly diced500ml chicken stock6-8 large prawns, raw
Preheat the oven to 200C
Place cherry tomatoes in a roasting tin ans sprinkle over the red onion, garlic and olive oil. Roast for 20 minutes.
Stir in the rice, chorizo, rosemary, chicken stock, salt and pepper. Return to the over for a further 20 minutes.
Stir in the prawns and return to the over for another 10 minutes.
Serving Size: 2 good sized portions
