Ingredients

    1 lb. chicken breast (note: you can add any kind of meat or seafood to this)
    1 can diced tomatoes (can be seasoned)
    1 clove garlic, minced
    3 cups Brown Rice
    1 cup fresh peas
    1 green and red bell pepper
    1 cup chicken broth
    1 tbsp parsley
    Salt and Pepper to taste
    1/3 cup olive oil

Directions

In heavy skillet, saute chicken that has been cut into bite-size pieces in olive oil until lightly browned. Take out chicken and set aside (keep warm). Add onion and peppers to cook until soft. Add garlic, tomatoes, parsley, rice (uncooked). Bring to a boil and add chicken broth. Let simmer for 20 minutes or until rice is tender. Add chicken and peas for remaining 5 minutes and serve.

    Incredible!
    I'm vegetarian, so I substituted the vegetarian version of chicken and chicken broth and it turned out excellent. The peppers really make this dish, giving it a slight sweetness. I used a medium onion, diced and along with the broth I added 3 cups of water to get the instant brown rice done. - 3/28/17

    Very Good
    This was delicious! Not hugely flavourful but very yummy and I'm looking forward to leftovers for lunch today! And so so easy to make too! - 10/6/09
